The Mosaic hop variety was developed by hop innovator John I. Haas in 2012 and has since become one of the most popular hops in craft beer. A descendant of Simcoe and Nugget hops, Mosaic is known primarily for its pronounced berry flavor, a flavor some describe as tasting exactly like Fruity Pebbles, and an aroma thatโ€™s an intricate mosaic (see what we did there?) of fresh fruit including tangerine, lime, peach, passion fruit, and blueberry.
