The Mosaic hop variety was developed by hop innovator John I. Haas in 2012 and has since become one of the most popular hops in craft beer. A descendant of Simcoe and Nugget hops, Mosaic is known primarily for its pronounced berry flavor, a flavor some describe as tasting exactly like Fruity Pebbles, and an aroma that’s an intricate mosaic (see what we did there?) of fresh fruit including tangerine, lime, peach, passion fruit, and blueberry.
